Menudo
Menudo is a traditional soup that originated from Mexico. But it can be different depending on the region in Mexico. Some make it white. For some, it’s red. Some people eat menudo with chips, tortillas or bread. Either way, many people call it delicious. In a little restaurant in Porterville two customers explain why they like the soup.
Irma Navaro, is a customer at Asada’s restaurant in Porterville. She says she eats her menudo differently. Her family is from Colima, Mexico. Navaro says, “I’m actually a fake menudo eater, I only eat the hominy and broth.” She does not like the taste of the meat but loves the flavor of the soup.
Another customer, Alex Madrigal says, “I think one of the most important things about menudo is the way the tripe is cleaned cause it does matter how the preparation is with the meat. If it is not very clean you can taste it in the broth.”
The broth is an important part of the soup. It’s known for its flavor. It’s known for bringing families together – for a few hours. Making the soup takes at least five hours.
